Queijadas de Sintra are one of the most traditional and signature Portuguese pastries, rooted in the origins of conventual baking. These queijadas are perhaps one of the most unique desserts in Portuguese pastry making and are seen throughout all pastry shops in Portugal. They are unbelievably rich in texture and sweetness, with a fluffy sweet crust on top. While you might think they are difficult to make, they are simple and easy to make without much fuss.
Ingredients:
For the Dough:
2.5 cups flour
1/2 cup warm water
1/2 teaspoon salt
1 egg
1 tablespoon melted butter
For the Filling:
2 cups fresh cheese (Use any type of fresh cheese, you can also make some traditional Portuguese style with this Queijo Fresco recipe)
1.5 cups sugar
8 egg yolks
cinnamon to taste
1 12 cup cupcake/muffin baking pan
Directions:
1) Preheat the oven to 380 degrees Fahrenheit.
2) Knead the flour with the warm water together with the salt, 1 egg, and melted butter until it is an even consistency.
3) Use a roller to roll the dough very thinly and cut into circular formed shapes.
4) Fill a greased cupcake/muffin baking pan with the circular dough shapes. Set aside.
5) In a bowl, mix the fresh cheese, sugar, cinnamon and egg yolks well.
6) Place the mixture into the dough formed shapes.
7) Bake until the outsides are golden brown and the centers are cooked, but still soft, for around 15-20 minutes.
8) Remove them from the oven and sprinkle with cinnamon to taste. Serve.
