Carne Estufada (Azorean Beef Casserole)

Carne Estufada is another wonderful recipe coming from the islands of the Azores. It is a delicious recipe for a beef casserole which is absolutely delicious and flavorful. The best part about this recipe is just how simple it is to make with pretty easy to find ingredients. This dish is really delicious and is a popular eat around the islands, especially enjoyed as a petisco, which is a small like appetizer, so go ahead and make some and share so everybody can enjoy the deliciousness, its the Azorean way!

Ingredients:
1 kilo Rump steak
1 onion
1 bay leaf
4 cloves garlic
1 glass white wine
Salt and pepper to taste
Cooking oil
1 tablespoon tomato puree
1 tablespoon vinegar
Directions:
1) Combine salt, pepper, crushed garlic, vinegar, wine and bay leaf and marinate the meat overnight.
2) In a saucepan, brown the meat in cooking oil. Add the marinade plus tomato puree and onion. Cover and cook over a low heat for 2 hours or until tender.
3) Turn the meat several times whilst cooking and add more wine if necessary. Serve sliced with sauce
from the pan.

    Thank you for sharing these great m, traditional recipes! My husband is 50% Portuguese, and I have been looking for some recipes to make for family functions with his mom’s side. His great grandparents are from the Azores, so to find recipes from the islands is very exciting! So many of these look absolutely delicious; I can’t wait to try them!
