Bolo de Ananás (Pineapple Cake)

This recipe is a simple and easy way to make wonderful Portuguese pineapple cake. For those who are big fans of pineapple like I am and many of my Portuguese compatriots, this dish is quite delicious and has been a traditional family recipe for generations. It is quite easy in terms of directions and ingredients as always so go ahead and try it out and tell us what you think, we are sure you will love it!

Ingredients:
4 Eggs split into yolks and whites
1 Stick of butter
1 Teaspoon baking powder
1/2 cup Sugar
1/2 cup Flour
2 teaspoons Caramel sauce
1 Pineapple sliced

Directions:
1) Weigh the eggs and use an equal weight of both sugar and flour.
2) Cream the sugar and butter together and when creamy add the egg yolks and beat until well blended.
3) Add the sifted flour and baking powder and beat until blended.
4) Fold in beaten egg whites.
5) In a deep cake tin pour a little caramel sauce and line the base with sliced pineapple.
6) Pour the cake mixture over the pineapple and cover with further slices of pineapple.
7) Bake in oven 350 degrees for about 15-20 or until ready.
8) Serve and enjoy!
