This is an easy way to make Bolos de Milho, or Portuguese corn cakes. This is a traditional recipe in Portuguese cuisine which is very similar to other types of fried corn cakes. This unique variation is quite delicious with just the right amount of sweetness. I personally have made and enjoyed these bolos de milho many times before and I can say it is quite easy. Ingredients:
4 cups (18 oz.) corn flour
3 cups milk
Pinch salt.
4 cups (18 oz.) plain flour
3 tablespoons butter
1 cup sugar
Directions:
1) Mix both flours together and add the sugar and salt.
2) Boil the milk with the butter and pour hot milk over the top of the other ingredients and mix until a dough forms.
3) Cover a clean towel with a little corn flour and heat griddle until hot.
4) Taking a small portion of the dough at a time, place on the floured towel and form a ball, then pat out to form a round, flat cake.
5) Place the cakes on the hot griddle and cook until brown.
