Recipe of the Day: Portuguese Carrot Rice (Arroz De Cenouras)

Today we would like to bring you guys a wonderfully easy and simple recipe for Portuguese Carrot rice, or Arroz de Cenouras. This dish is a very popular Portuguese way to enjoy a delicious hearty meal with some tasty vegetables and can be used in combination with another dish or simply just as an appetizer. It is very easy to make and you should be able to find all the ingredients are your local grocery store with not much trouble. Try this delicious dish and tell us what you think!

Ingredients:
4 or 5 Carrots
1 chopped Onion
6 tablespoons Olive Oil
4 cups Water
Salt to taste
2 Cups Rice

Directions:
1) Begin by sauteeing the onions in a saucepan with the olive oil.
2) Start shredding the carrot with a grater, then start placing the carrot gratings in the saucepan with the onions and olive oil.
3) Now place the water in the saucepan and season with salt to taste.
4) Once the water is boiling, add the rice. Cover the saucepan and reduce to flame to a minimum heat, and let it cook the rice for about 12 minutes.
5) After that turn of the heat and let it sit for 5 minutes before eating.
6) Serve and enjoy!

    Just made it today its fabulous everyone loveed it. Made it with Indian basami very favorful but subtle. Went well with slightly spicey pork
