Fried Cabbage with chouriço. This is a great recipe because it is inexpensive, easy to make and really good. What makes this dish so richly flavorful is how the cabbage absorbs the distinct smokey spicy flavor of the chouriço. The best chouriço for this is usually sold in a small tray already chopped for you, but you can always chop up the links yourself if you get it that way.

Ingredients:
1 lbs chouriço, chopped
1 onion, finely chopped
2 lbs cabbage, diced into short strips
salt and pepper to taste
1 teaspoon olive oil
Directions:
1) Fry the chouriço in large frying pan with the olive oil.
2) Add the chopped onion and stir until the onions become translucent.
3) Add cabbage, salt and pepper taste, and stir until all cabbage is coated.
4) Cover and cook over low heat until cabbage is tender, about 20 to 30 minutes.
5) Serve while hot.
I will definitely try this. I have cabbage from the garden and a pound of Amaral’s ground linguica in the fridge. My Portuguese grandmothers would approve. Thank you for the recipes.
