The Portuguese have long used almonds in many traditions from weddings and christenings to gifts at Easter time. This recipe of toasted almonds, or amêndoas torradas, uses Portuguese inspired spices to make delicious toasted almonds, great for snacks and even a small tapas style appetizer. Ingredients:
2 cups of blanched almonds
2 teaspoons of olive oil
1 teaspoon of salt
1 teaspoon of ground cumin
1/2 teaspoon of ground coriander
Directions:
1) Toss all of the ingredients in a large bowl making sure to cover each almond with spices and olive oil.
2) Bake on a baking sheet in the oven at 350 degrees Fahrenheit until they become golden brown.
3) Serve and enjoy.
