This is a delicious Portuguese recipe for an Asparagus and Chourico Omelette, known as Omelete de Chouriço com Espargos. It is one of the most healthy and hearty ways to start your day. The asparagus gives a wonderful smooth taste in combination with the eggs, awesome Portuguese spicy pork chouriço, and bursting flavor of the garlic. Ingredients:
1/2 lbs asparagus spears
3 tablespoons olive oil
1 chouriço sausage, sliced thinly
2 garlic cloves chopped
5 eggs
2 chopped onions
Salt and Pepper to taste

Directions:
1) Chop up the asparagus pieces into thirds.
2) Bring a saucepan of water to a boil and add the asparagus and let it cook for 3-4 minutes.
3) In another saucepan, place 2 tablespoons of olive oil along with the onions and let is cook on low heat for about 7 minutes.
4) After the asparagus have cooked add them to this saucepan with the onions along with the garlic and chouriço pieces and let them saute while stirring for about 3 minutes.
5) Now whisk some eggs in a bowl until they are a good consistency. Add the asparagus and chouriço mixture to this bowl and season with the salt and pepper.
6) In a saucepan, add the rest of the olive oil and add the egg and asparagus mixture to the pan and cook it on high heat until browned. Do not let it overcook.
7) Serve and enjoy!
