This is a simple & easy Azorean recipe from the island of Sao Miguel which is a wonderful treat for those with a sweet tooth like myself. *Makes 24 Cookies*
Ingredients:
1 cup sugar
3 tablespoons butter
2 tablespoons cornstarch
2 eggs
2 1/2 cups all-purpose flour
2 teaspoons baking powder

Directions:
1) Preheat the oven to 325 degrees Fahrenheit.
2) In a large bowl, stir together the cornstarch and sugar.
3) Add the butter and mix well. Add eggs, one at a time, mixing well after each addition.
4) Combine the flour and baking powder; stir into the sugar mixture until a dough forms.
5) On a floured surface, roll the dough out to 1/4 inch thickness and form them into circular shapes with a cookie cutter.
6) Place cookies on to a greased baking sheet.
7) Bake for 7 to 10 minutes in the oven, until the cookies are done.
8) Allow cookies to cool for a couple of minutes.
9) Serve and enjoy!
