They say there are hundreds, maybe thousands, of ways to prepare and enjoy Bacalhau. Linguas de Bacalhau, or Portuguese fried cod cakes, are probably the most delicious way to enjoy this wonderful fish. We are going to show you a simple and easy way to make these fried cod cakes without the fuss. These can be eaten as a main meal or as a side for most dishes.
Ingredients:
2 lbs. of Salted Cod “Bacalhau” cut into pieces
1/2 cup flour
3 eggs beaten
Oil to fry
1/2 cup olive oil
6 tablespoons vinegar
1 onion chopped
1 bunch (2 tablespoons) of parsley chopped
1 hard boiled egg egg
13-15 black olives to serve on the side
Salt and Pepper to taste
Directions:
1) Put the pieces of cod soaking in a bowl for 24 hours, make sure to change the water in the bowl 2-3 times.
2) Then drain the pieces well, dry them in a cloth or paper towel, and coat them with flour and beaten eggs. Fry them in a pan in hot oil. Drain them on paper towels once done.
3) Prepare the following sauce: finely chop the onion, parsley and boiled egg and mix with olive oil, vinegar, salt and pepper. Stir well. Serve this sauce with the fried bacalhau pieces.
4) Serve with the sauce and black olives on the side and enjoy!
