Lentil and chickpea soup, or sopa de lentilhas com grão, is a very typical Mediterranean style soup. This hearty and nutritious soup is absolutely rich in flavor and perfect for just about any occasion. It can be made quite easily without much fuss. Enjoy.
*Serves 3-4*
Ingredients:
1 onion, chopped
2 celery stalks, chopped
1 cup brown or green lentils, rinsed
1 cup canned chickpeas, drained and rinsed
1/2 cup tomatoes, chopped
1/4 cup olive oil
2 garlic cloves, minced
1 teaspoon salt
1 teaspoon paprika
1 cup vegetable broth
2 cups water
salt and pepper to taste
Directions:
1) In a large saucepan, add the olive oil, chopped onion, garlic, and celery. Let it cook for 3-4 minutes on medium heat.
2) Pour the water, vegetable broth, lentils, chickpeas, tomatoes, paprika, and teaspoon of salt into the saucepan. Stir it well.
3) Let it simmer for about half an hour on medium low heat while covered, until the lentils are soft and tender. Keep stirring occasionally.
4) Once done, season with salt and pepper to taste.
5) Pour into bowls and serve.

Your very welcome! This is one of my favorites to eat, you’re right it can definitely use a bit more spice depending on your preferences. I like it so much because its such a healthy soup and it sacrifices no flavor whatsoever.
I have found when using lentils that if I put salt in at the beginning they take forever to cook, so I put it in towards the end. I have also found that lentils are naturally gas forming for many people. But if I boil them on their own for 15min or so then pour the brown water off, rinse them and continue boiling in fresh water , it reduces the gas potential a lot. Has anyone else found this happens? Does anyone else have tips for using lentils or even chickpeas. We live on them, they have become our staple and we are not even Portuguese or Mediterranean.
I fell in love with this soup but I never leave it well enough alone. I tend to add chicken and linguica and some red pepper. It usually goes to w ork.
Made this today and it was SO good! I also added a bit more spices, like fresh parsley and some moroccan spices, and it turned out wonderful. So easy to make.
