Creme de Mamão is a Mozambique Papaya Egg Pudding that is a very popular dessert in Mozambique. It combines the Portuguese style of egg puddings with the Mozambique flavors of Papaya in a smooth and creamy light dessert. Simple and easy to make, it is perfect for enjoying in the summer months.
Ingredients:
1 papaya (about 1 lbs), peeled, seeded, chopped
1/4 cup lemon juice
1/4 cup water
2 cups sugar
1 stick cinnamon
4 cloves
5 egg yolks
Directions:
1) Combine the papaya, lime or lemon juice, and water in a blender and blend at high speed for about 30 seconds until it is smooth and consistent.
2) Pour the smooth puree into a saucepan.
3) Mix in the sugar, cinnamon stick and cloves and, stirring constantly, bring to a boil over high heat.
4) Once it reaches a syrupy consistency, turn the heat to low, and remove the cinnamon and cloves.
5) In a bowl, beat the egg yolks with a fork.
6) Beating constantly, pour the hot syrup into the yolks slowly in a thin stream and continue to beat until the mixture is smooth and thick.
7) Let it sit at room temperature for 10 minutes to let the eggs cook in the mixture.
8) Pour the mixture into four ramekins and refrigerate for about 1-2 hours and serve it chilled.
