Many of the listed ingredients are things you can find in most kitchens, and this makes it one of the more popular portuguese dishes because its just so delicious yet simple to make. The one thing you will need to get to ensure the dish comes out great is some pork butt (shoulder), or Boston butt for those of you who live in New England, US. Ingredients:
5 lbs pork butt
2 tablespoons paprika
1/2 tablespoon sugar
2 teaspoons fresh ground white pepper
2 teaspoons dried oregano
2 tablespoons minced garlic
1 tablespoon salt
1/2 cup red wine
1 teaspoon fresh ground black pepper
1 teaspoons cayenne pepper
Directions:
1) Combine all ingredients and mix well, if you can, leave for several hours so the flavors can develop.
2) Stuff into hog casings or make into patties.
3) Smoke on a home smoker until internal temperature reaches 160°.
