Baked Tilapia Fillets Portuguese Style

This is an easy recipe for making delicious tilapia fillets Portuguese style baked in the oven with fresh tomatoes and onions. A great dish that goes perfect with many sides.

Ingredients:

1 1/2 lbs tilapia fillets
2 medium ripe tomatoes, chopped
1 red onion, sliced
2 cloves of garlic peeled
1 red pepper sliced
3 tablespoons of olive oil
1 teaspoon of salt
1 teaspoon of pepper
1 tablespoon chopped fresh parsley

Directions:

Preheat oven to 375º.

Place the tilapia fillets in a baking dish.

Add the olive oil and season the fillets with salt and pepper.

Place the sliced vegetables on the fillets and season them with salt and pepper.

Cover the baking dish tin foil.

Bake 25-30 minutes

Remove the oven and garnish with fresh chopped parsley and it’s ready to serve.
