This recipe is one of the more popular dessert dishes you will see at any Portuguese festival or event. Bolo Inglês is a great way to combine cake and fruit and is perfect for those with a sweet tooth. There are many ways to make this cake, but ours is a unique variation coming from a passed down family recipe from our Tia Almerinda and I can guarantee you’ll love it as much as we do every time it is made. The recipe is both in English and Portuguese for those who need it.
Ingredients:
2 cups sugar
3 cups Flour
1 pinch of salt
1 & 1/2 sticks unsalted Butter
2 teaspoons baking powder
2 cups milk
5 eggs
1 cup crystallized fruit (cubed)
1 cup raisins
1 cup chopped (walnuts)
4 tablespoons port wine
9 inch Baking Pan
Directions:
1) In a bowl, beat the butter and sugar until creamy
2) Separate egg yolks and beat egg whites until foamy and place the egg whites aside
3) Add egg yolks one at a time to this mixture
4) Slowly add dry ingredients (Flour, Baking Powder, salt) to the mixture
5) Slowly add the milk to the bowl
6) Add four tablespoons of port wine
7) Before adding fruit and walnuts to the mixture, sprinkle them with flour
8) Now add the egg whites to the mixture
9) Place this mixture in the 9 inch baking pan in the oven at 350 degrees for an hour

Acucar 2 copos
Farinha 3 copos
Manteiga 1 barra e meia
2 colheres de sopa de fermento
2 copos de leite
5 ovos
1 copo frutas cristalizadas (picada)
1 copo passas vermelhas
1 copo nozes picadas
4 colheres de vinho de porto
1 pitada de sal
Instruções:
1) Bate-se a manteiga com o acucar ate ficar cremoso
2) Junta-se as gemas os poucos
3) Acrescenta-se os ingredientes secos
4) Junta-se alternadamente o leite
5) Passa-se as frutas secas e nozes em farinha
6) Junta-se as claras batidas em castelo
7) Mistura-se bem e vai ao forno a 350 durante uma hora
