Cachupinha

Cachupinha is one of the many variations of Cape Verde’s national dish, Cachupa. It is the more simple and easier to make version of the dish but is just as flavorful and delicious. The signature combination of squash, corn, beans, and chourico cooked perfectly together with the typical seasonings makes cachupinha the very popular Cape Verdean food that it is. It is a hearty stew type dish with intense flavor, a smooth tomato based sauce and a nice scent.

Pastéis de Bacalhau are one of the most popular and traditional foods in Portuguese cuisine. They are famous for good reason, they utilize one of the most signature ingredients in Portuguese gastronomy, bacalhau. There are many ways to cook bacalhau, or salted cod, and this is certainly one of the best. The salted cod deep fried fritter style is absolutely one of my favorite ways of enjoying bacalhau. They can be served as an accompaniment or on their own with some rice as a meal and are always sure to impress.

Coconut Carob cookies, which are also known in Portuguese as Biscoitos de Alfarroba e Coco. These are a delicious Portuguese style dessert that combine the wonderful flavors of coconut and carob. Carob is a very healthy alternative to cocoa powder that has a unique sweetness and texture and numerous health benefits. It is a very typical ingredient of Mediterranean countries as an alternative to cocoa because of this. These carob coconut cookies have a nice brown coloring and delicious smooth flavor and texture.

Goan Pork Vindaloo (Vindalho de Carne de Porco)

Pork Vindaloo is one of the most popular dishes in Goan cuisine and India as a whole. Vindaloo dishes are very closed tied historically with Portuguese cuisine, as the term Vindaloo originates from the Portuguese style of cooking called “vinha de alho”, which is a traditional Portuguese way of preparing meats with wine and garlic. This style of vindaloo is a traditional Goan Pork dish flavored with chilies, garlic, fresh ginger and vinegar. The unique sweet and savory taste of this dish coming from the combination of these spices makes it the unbelievably delicious and popular dish that it is. Carob Bread (Pao com Alfarroba)
