Polvo Assado (Portuguese Roasted Octopus)

Here we have a wonderful recipe for Portuguese Roasted Octopus, Polvo Assado, coming from one of the islands of the Azores, in Ribeira Grande, Sao Miguel. This is a unique dish that is emblematic of Azorean cuisine. It is really simple and easy to make, but delicious with tons of flavor and is sure to impress.

Ingredients:
2 pounds octopus chopped
1 teaspoon White Pepper
8 potatoes de-skinned
1 malagueta pepper chopped
3 tomatoes, peeled and de-seeded
1/2 cup of red wine
1/2 cup of olive oil
1/2 cup of butter
4 garlic cloves chopped

Directions:
1) Properly cut the pieces of the octopus. You can learn how to properly cut the octopus meat here

2) Place all of the ingredients in a large saucepan and mix them together, cover it, and let them marinate for 5-6 hours.
3) Once done, place them in a large baking dish and then put it in the oven and cook it at 325 degrees Fahrenheit for about 35-40 minutes or until it is well cooked and the octopus is tender.
4) Serve it in a large platter with some bread to enjoy the sauce, enjoy!

Making Linguica (Pork)

Today we’re going to give you guys a traditional and unique recipe for the Portuguese fan favorite, Linguica. Many of the listed ingredients are things you can find in most kitchens, and this makes it one of the more popular portuguese dishes because its just so delicious yet simple to make. The one thing you will need to get to ensure the dish comes out great is some pork butt (shoulder), or Boston butt for those of you who live in New England, US. Ingredients:
5 lbs pork butt
2 tablespoons paprika
1/2 tablespoon sugar
2 teaspoons fresh ground white pepper
2 teaspoons dried oregano
2 tablespoons minced garlic
1 tablespoon salt
1/2 cup red wine
1 teaspoon fresh ground black pepper
1 teaspoons cayenne pepper

Directions:

1) Combine all ingredients and mix well, if you can, leave for several hours so the flavors can develop.
2) Stuff into hog casings or make into patties.
3) Smoke on a home smoker until internal temperature reaches 160°.

This has a serving size of eight people, now go ahead and enjoy!

The Portuguese have been first and foremost a seafaring culture throughout their history, and this has heavily influenced their diet and cuisine for hundreds of years. No Portuguese meal is typically complete without some form of fish, and “sardinhas” happen to be one of the most popular, simple, and healthy of them all. Grilled Sardines, or Sardinhas na Brasa, is one of the most traditional styles of cooking sardines and this dish combines sardines alongside some boiled potatoes to make a flavorful and hearty meal perfect for enjoying during the summer months.
