Cavacas (Poppover Dessert)

This Cavacas recipe took quite a bit of effort to get from my aunt’s recipe book as it has been a secret family recipe for generations, and even though it is quite simple, it is one of my favorite desserts. Everytime time my aunt makes these my sweet tooth gets excited and I always end up eating one too many! Cavacas are a very traditional Portuguese recipe for a cupcake style pastry and with the simple ingredients needed to make them they have been made by many Portuguese for centuries. So tell us what you think of this recipe as it is pretty straightforward to make and really delicious to eat!

Ingredients for Dough:
9 eggs
2 cups of flour
1 cup of oil
For the Icing:
2 cups confectioners sugar
2 tablespoons of milk

Directions:
1) Beat the ingredients for the dough for 2 to 3 minutes until it reaches a smooth and even consistency.
2) Grease a cupcake pan and fill the holes with batter about 3/4 of the way.
3) Bake in the oven for 350 Fahrenheit for about 30 minutes until they are golden brown (do not open the baking oven door for the whole time or they will collapse).
4) After they are done, remove from the oven, and let them cool.
5) Mix confectioners sugar with the milk in a saucepan on medium heat until it becomes a syrup consistency.
6) Now spread the icing over the cavacas and serve!
