This wonderful recipe combines many delicious ingredients and some spices to create a flavorful Cortume de Nêspera, or Loquat Chutney. This sauce may be prepared and stored for any occasion and can be used to add some flavor to any dish, from fish to Indian samosas, the choices are endless. Ingredients:
6 cups stoned loquats
I large apple
4 cups sugar
2 ounces ground ginger
1 small red pepper
1 teaspoon salt
2 cups apple cider vinegar
1 large onion
1 1/2 cups seedless raisins
Rind and juice of 1 lemon
1 teaspoon allspice
1/2 teaspoon mace (Dried Nutmeg Shell)
1 teaspoon nutmeg
Directions:
1) Wash the loquats, remove stem ends and stones then cut into small pieces.
2) Chop the onion, peeled apple and red pepper.
3) Place all the ingredients into a large saucepan and simmer until soft and thick.
4) Cool Slightly
5) Fill prepared jars and seal
