This is the recipe for Galinha da Cebolada, which is Portuguese Chicken & Onion Casserole. This is a delicious way to enjoy Portuguese cooking in a simple and easy way. Getting the most out of every ingredient is the way Portuguese cooking is based and typically uses very few ingredients to make something delicious. This dish is one of my favorites and is not that difficult to make. The directions are pretty simple and straightforward so try it out and tell us what you think!
Ingredients:
1 chicken
1 packet dry onion soup mix
3-4 cloves garlic
3 tablespoons cream
Lemon juice
Vegetable oil
1/4 bottle beer
Black pepper
2 cups water
1 chicken stock cube
1/2 lbs. Broccoli
Directions:
1) Dissolve the stock cube in the water.
2) Joint the chicken and grease an oven-proof dish with a little vegetable oil.
3) Roll the chicken in the dry soup mix and place in the dish, adding the crushed garlic, broccoli, lemon juice and beer.
4) Cook about 3/4 hour in oven – 350 degrees – or until browned.
5) Turn occasionally and add a little water in which the stock cube has been dissolved to avoid sticking.
6) When ready to serve, place the chicken on a dish and make a sauce with the juices in the cooking pan, adding the remainder of the water.
7) Blend well and add cream.
8) Serve and enjoy!
Note: This recipe can be made with pork chops instead of chicken.
