Green Peas and Chouriço (Ervilhas com Chouriço)

Ervilhas com chouriço is a delicious and hearty traditional dish. A very popular Portuguese dish, green peas and chouriço combines the wonderful flavors of Chouriço with some tasty vegetables and eggs in a simple & easy way. Try it out, and tell us what you think!

 

*Serves 1-2*
Ingredients:
1/2 onion chopped
4 garlic cloves, chopped
1 tbsp. olive oil
2/3 cups water or chicken broth
1 chouriço sausage, sliced
2 lbs fresh or frozen green peas thawed
3 eggs

Directions
1) Saute the onion and garlic in a saucepan with olive oil for about a minute on medium heat.
2) Add the sliced chouriço and cook on low heat for approximately 15 minutes.
3) Add the peas and broth or water and cook until tender.
4) At the end, break eggs into the mixture and cook for another 2 to 3 minutes. Serve and enjoy!
