Honey Cake (Bolo de Mel)

Bolo de Mel, or Honey Cake, is a very traditional dessert in Portuguese cuisine which combines simple and sweet ingredients like molasses and cinnamon powder along with some chopped almonds and walnuts for a richly tasting cake with a unique flavor. This honey cake is perfect for serving with guests and is always sure to impress. Enjoy.

Ingredients:
9 eggs
1/2 cup sugar
2 tablespoons molasses
1.5 cups honey
1.5 tablespoons olive oil
1 teaspoon butter
1 tablespoon cinnamon powder
1 lemon rinds
2 cups flour
1 teaspoon baking powder
1 cup chopped almonds
1/2 cup ground walnuts

Directions:
1) Preheat the oven to 350 degrees Fahrenheit.
2) Beat the yolks in a blender with the honey, olive oil, cinnamon powder, molasses, and lemon rinds until it is a smooth and even consistency. Pour it into a large bowl.
3) Now beat the egg whites together with the sugar in the blender until they are creamy and smooth.
4) Pour this mixture into the large bowl and mix it together.
6) Finally, add in the flour, baking powder, chopped almonds, ground walnuts and mix it together well until it is smooth and even.
7) Pour the mixture into a greased baking mold and place it in the oven.
8) Let it cook for 15-18 minutes until the top has browned.
9) Take it out of the oven once done, remove from the mold, and let it cool for 15 minutes. Serve.

  1. I love bole de mel,,,and would like to try making,,,but i have noticed the cues i get is so dense with some fruit,,your photo looks like a madeira cake ,,,,help…and thanks querino de-freitas
