Iscas de Fígado (Portuguese Cooked Liver)

This wonderful recipe we are going to show you guys today is truly an Azorean specialty. It is a unique dish and a fan favorite in the islands for those who enjoy different tastes and texture. We are talking about Iscas de Fígado, which is Portuguese cooked liver and it is really quite a delight. Ingredients:
12.5 ounces beef liver
1 teaspoon cumin
6 tablespoons olive oil
Marinade:
3 cloves garlic
1 teaspoon Pimenta da Terra
1 bay Leaf
white wine or beer Salt to taste

Directions:
1) Marinate the sliced liver in the above ingredients using enough wine or beer to just cover the liver.
2) Allow to stand for 2 hours. Fry the “liver in a little olive oil until brown. Remove and place in a separate saucepan.
3) Add the marinade to the frying pan and bring to the boil. Pour over the liver and simmer gently until tender.
4) This sauce is fairly rich so a little water maybe added if required.
5) Add cumin to taste and serve with rice, enjoy!
