Queijadas de Laranja are orange cupcakes that are quite popular in Portugal and very similar to the style of the traditional Queijadas de Leite, but with a citrus twist. These are smooth tasting sweet orange cupcakes with a soft texture that is just the slightest bit chewy inside. They are quite simple to make and do not require difficult to find ingredients.
*Makes 8 to 10 Queijadas*
Ingredients:
1 cup sugar
1 cup flour
5 tablespoons butter, melted
1 cup milk
3 eggs
rinds and juice of 2 oranges
1 teaspoon baking powder
butter to grease the pan
8-10 cupcake baking wrappers
Directions:
1) Grease the baking wrappers with butter and preheat the oven to 375 degrees Fahrenheit.
3) In a mixer on medium speed pour in the sugar, milk, baking powder, flour, and the rinds and juice of 2 oranges. Add the eggs and butter and continue beating until it reaches a smooth and even consistency.
4) Add the mixture to the cupcake wrappers and place them on the baking mold.
5) Bake for about 15 to 20 minutes or until slightly browned on top but not too much so the centers are soft.
6) Remove from the oven and let cool. Serve.
Im a little confused what is 2.5 cups
It is two and a half cups.
