This is a simple & easy way to make Ovos com Cogumelos, or Portuguese style Eggs and Mushrooms. The combination of the flavors in both the eggs and mushrooms along with the rest of the ingredients make for a very delicious and unique dish. It is one of the less traditional dishes in Portuguese cuisine but still on of my favorites. The directions and ingredients are pretty simple so go ahead and try it out and tell us what you think!
Ingredients:
6 eggs
1 tablespoon butter
Squeeze of lemon Juice
Cheese
Salt and pepper
1/2 cup mushrooms (fresh or canned)
6 tablespoons double cream
Grated nutmeg
Directions:
1) Slice and cook the mushrooms in the butter and lemon juice for just a few seconds.
2) Pour half the cream into each of the small round oven-proof dishes and break the eggs carefully on
top.
3) Cover with the mushrooms being careful not to break the eggs.
4) Season remaining cream well and spoon over the top of each dish.
5) Cover each dish with a thick layer of grated cheese.
6) Stand in a bain marie and cook in a pre-heated oven for ten minutes at 350 degrees.
7) Serve with brown bread and butter or garlic bread.
