Piri-Piri Chicken is a true Portuguese specialty, being one of the most recognized dishes throughout our cuisine. It is such a great and traditional Portuguese dish not only because of its rich and spicy flavor, but because it is made easily with some simple ingredients. Ingredients:
1 3.5 pound chicken (chicken thighs & drumsticks can be used)
1/8 cup olive oil
¼ cup chili paste
1/8 cup white wine
½ teaspoon salt
¼ teaspoon black pepper
1 teaspoon sweet paprika
4 garlic cloves, minced
2 bay leaves
3 tablespoons piri-piri sauce (you should be able to find this locally, if you not can buy some here on Amazon)
Directions:
1) In large bowl, combine all the ingredients together the chili paste, white wine, salt, pepper, paprika, garlic cloves, bay leaves, and 1 tablespoon of the piri-piri sauce, mix well. Now add the chicken, turning it a couple of times to coat well.
2) Cover and refrigerate for 3-4 hours, turning occasionally. It can be refrigerated for up to 24 hours if you want to prepare it in advance.
3) Reserving the marinade, place the chicken, skin side down, on a greased grill over medium heat; close lid and cook for 10 minutes.
4) Turn and brush with marinade; cook for 30 to 40 minutes or until well browned.
5) Once done, serve with the 2 tablespoons of piri-piri sauce in a bowl for dipping on the side.
