Today we are going to give you guys a unique but simple recipe for Porco com Molho de Fígado, or Pork with Liver sauce. This might be a bit too much for some, but for those who enjoy the unique texture and flavor of all types of meat including liver like many of my Portuguese compatriots, this dish is quite a treat. This is a delicious way to enjoy all parts of the pork in combination and is definitely a favorite of mine and many others. The directions and ingredients for this recipe are pretty straightforward so go ahead and try it out and tell us what you think!
Ingredients:
1 large onion
2-3 cloves garlic
1 1/2 tablespoons
Paprika
Oil
Salt and pepper
18 ounces grams spareribs
18 ounces grams pork loin or shoulder
17 ounces Pork Liver
Butter
Directions:
1) Cut the spareribs into 2-rib portions and cube the loin or shoulder meat.
2) Marinate overnight in a little water with vinegar or lemon juice, salt, pepper, paprika and crushed garlic. (You should have enough liquid to
completely cover the meat.)
3) Remove the meat and fry in a little oil until brown. Saute the finely chopped onion and crushed garlic in some butter until golden.
4) Add the paprika and allow to brown, taking care not to burn the spice. Add the meat and saute gently until the meat takes the colour of the paprika
mixture. Add enough marinade liquid to almost cover the meat, then add the cubed liver.
5) Cover the saucepan and simmer for 20 – 30 minutes, stirring occasionally. When done, take 2 to pieces of the liver, a little sauce and puree until creamy. If desired a little lemon juice may be added.
6) Return the liver puree to the saucepan and cook until the sauce thickens.
