Portuguese Chestnut Pudding (Pudim de Castanhas)

Here are going to give you all an unbelievably delicious recipe for a Portuguese dessert called Pudim de Castanhas, or Chestnut Pudding. As many puddings in Portuguese dessert dining are much like flans as you probably know, this is an interesting variation on the dish with some delicious chestnut flavor. This is my favorite Portuguese pudding by far as I am bit biased for my love of chestnuts but I am sure you will all love it as well. This dessert might seem complicated to make because it is so delicious but it is quite simple once you find and prepare the chestnuts which is not too difficult. Ingredients:
9 ounces chestnuts
1 and a 1/4 cup, or 9 ounces sugar
3 egg whites
3 egg yolks
Few drops Vanilla essence

Directions:
1) Boil the chestnuts in water then drain, skin and mince. (Leave some chestnuts to decorate afterwards)
2) To this add the sugar, egg yolks and vanilla essence.
3) Mix well before folding in the stiffly beaten egg whites.
4) Make a caramel sauce and line a cake tin with this before pouring the chestnut mixture into the center. 5) Bake in oven – 375 degrees, until set.
6) Serve with cream and the rest of the chestnuts on top, enjoy!
