Portuguese Roasted Rabbit (Coelho a Cacadora)

Coelho a Cacodora, a Portuguese Roasted Rabbit recipe. This is one of the most delicious recipes coming from the beautiful green islands of the Azores in Portugal. Going on rabbit hunting expeditions is a rite of passage for many men in the Azores and thus there have been ways to cook them that have been honed for hundreds of years. This delicious recipe is a delicacy in the islands, usually being made after these hunting expeditions. The ingredients are therefore very simple but very delicious in combination with the rabbit, especially the combination of some bacon as well. Ingredients:
1 large rabbit
6 slices bacon
3 cloves garlic
1 large sweet pepper
2 large onions
4 carrots
Juice of 1 lemon
1 Bay leaf
1 teaspoon paprika
2 cups white wine
1/3 cup ketchup or tomato sauce
1 cup water
1 large tablespoon lard
Salt and pepper to taste

Directions:
1) Make a marinade with the crushed garlic, pepper, bay leaf, paprika, white wine, ketchup and chopped sweet pepper.
2) Joint the rabbit and marinate overnight. In a saucepan, saute in lard the chopped parsley, finely
chopped onion, julienne carrots and slices of bacon until golden brown.
3) Add the rabbit, the marinade and water and simmer until tender.
4) When cooked, add the juice of one lemon and serve with some potatoes, enjoy!
