This is a simple recipe for Portuguese style coconut pudding, Pudim de coco. Puddings are specialty of Portuguese dessert making and this recipe is no different. Pudim de Coco is a flan style pudding and the coconut adds a delicious and unique flavor/texture to the dish which I have had the pleasure of enjoying many times before. In fact I am going to go make some right now. This recipe is super simple and easy to make and the ingredients are not difficult to find at all.

Ingredients:
1 and a 1/4 cups sugar
Water for the syrup
9 egg yolks
1/2 tablespoon flour
4 and a 1/2 ounces ground coconut
1 Egg white only
1/2 cup milk
Directions:
1) Prepare a syrup with the sugar in a saucepan with about 4-6 tablespoons water at 243 degrees Fahrenheit.
2) Once it reaches a syrup consistency, add the ground coconut and return to a low heat to cook for about 7 minutes, stirring constantly.
3) Add the flour dissolved in the milk. Stir.
4) When a ‘road’ forms in the bottom of the saucepan, gradually pour the contents over the beaten eggs, stirring constantly.
5) Pour into a buttered oven-proof dish and bake until firm in oven – 420 degrees.
