Ananas Caramelizado, or Caramelized Pineapples, are a very popular and a traditional treat in islands of the Azores in Portugal where it has been made and enjoyed for many generations. Pineapples in the Azores are famous for having unbelievable flavor and sweetness. This simple but delicious combination of ingredients give the pineapples a nice but subtle added flavor and truly enhances the wonderful texture and taste of the pineapple. Ingredients:
1 whole pineapple, sliced
1/2 cup sugar
3 tablespoons rum
1 tablespoon butter
Cinnamon powder to taste
Directions:
1) Melt the butter in saucepan at low heat.
2) Add the sliced pineapple and sugar.
3) Add the rum and let it flambe. Stir the contents together well.
4) Once the pineapple reaches a golden color of caramelization, it is done.
5) Place the pineapple into a serving dish and cover with cinnamon powder to taste. Serve while hot.
May be a dumb question…but can I do this with frozen pineapple? I bought a bag at costco and it seems to be never ending!
Of course! It will certainly not be as flavorful as a fresh one, especially some from the Azores, but still a great dessert nonetheless!
