Vitela com Cogumelos is a typical Portuguese recipe using veal in combination with some flavorful mushrooms. It is a dish with not only great taste but an unbelievable scent and look. Ingredients:
2 lbs. Veal chopped into pieces
1 lbs. Tomato
1 Onion chopped
7 Tablespoons Butter
3/4 cup white wine
Salt & Pepper to tastwe
1 Ramekin of cilantro
3/4 cups water
4 oz. Mushrooms
Directions:
1) Place in a small bowl the tomatoes in 1 and a half tablespoons butter and put them to the side.
2) Place in a small bowl the chopped onions with 1 and a half tablespoons butter and put them to the side.
3) Heat up the rest of the butter in a saucepan and place it on top of the bowl of chopped veal.
4) Mix the veal and the butter well.
5) Pour in the wine and add the tomatoes and onions together to this mix.
6) Season this bowl with some salt and pepper to taste as well as the ramekin of salt and add the water.
7) Place these contents in a large saucepan on the stove and cover it, turn on medium heat.
8) Mix the contents sparingly every 3 minutes for about 10 minutes.
9) Add the mushrooms to pan and continue mixing while it cooks for another 10 minutes.
10) Once done, serve on a plate with some boiled rice or “batatas fritas” (fried potatoes), enjoy!
