Spinach soup is one of the healthiest and tasty soups you can make. While this soup was not necessarily invented in Portugal, this variation of the recipe definitely has its own Portuguese flavor and is a recipe that has been passed down for generations in our family. Ingredients:
2 lbs. spinach
3 onions
5 chicken builloin cubes
2 cloves of garlic
4 tablespoons of butter
5 cups of water
Pinch of nutmeg
Salt and pepper
Directions:
1) In a saucepan dissolve 1 builloin cube in 1 cup of the water.
2) Add spinach and cook until tender.
3) Remove the spinach drain and chop. Save the broth in a bowl.
4) Saute chopped onions and crushed garlic in butter until golden, then add the chopped spinach and cook for a for 3 minutes, Stirring consistently.
5) Boil 4 cups of water together with the remaining broth.
6) Once the broth is boiling add the sauteed vegetables and lower the heat.
7) Let it simmer for fifteen minutes.
8) Sprinkle with a pinch of nutmeg before serving.
