Doce de Amendoim, or Peanut Candy, is a signature treat in Portuguese dessert making. Doce de Amendoim combines peanuts together with some sweet caramel syrup into a simple yet refined dessert. This a very simple dessert that is easy to make but always sure to impress no matter the occasion. The combination of the crunchy peanuts surrounded with the smooth caramel flavor makes for a sweet that is difficult to resist.
1 pound roasted and unsalted peanuts, deshelled
1 cup of water
1 cup sugar
1) Add the sugar and water to a saucepan and bring it to a boil.
2) Once the syrup begins to caramelize, add the peanuts, stirring constantly, until sugar is caramelized and reaches a smooth and even consistency, with a brownish caramelized color.
3) Remove from heat and spread the mixture evenly on a greased tray. Allow to cool in the refrigerator for 1-2 hours.
4) When chilled, slice them into small squares and serve.
