Simple & Easy Portuguese Chicken

• 4 lbs. Chicken
• 6 large Tomatoes (chopped)
• 1 large Onion (sliced)
• 1 red & green pepper (sliced)
• 1 can Black Olives (pitted)
• 3 cloves Garlic (minced)
• Fresh Parsley (chopped, to garnish)
• Pinch Coarse Sea Salt (to taste)
• 6 Tablespoons Lemon Juice
• 10 tablespoons Portuguese Olive Oil
1) Marinate the chicken in a bowl with a pinch of coarse sea salt, 5 tablespoons of olive oil, and 3 tablespoons of Lemon Juice. Let it marinate in the bowl for about an hour.
2) Chop up the rest of the ingredients and then take out the marinated chicken and place it in a baking pan along with the rest of the ingredients, add the rest of the olive oil and lemon juice.
3) Bake in the oven at 350 degrees F for about 40 minutes.
4) Remove from the oven and serve hot, Enjoy!
